Most of us do our part for the environment by recycling, turning the lights off when we leave a room and eating animal entrails. Oh, wait — that last part’s only for Lucy Moore of Leeds, England, whose bizarre gastronomical mission this year is to eat parts of animals that practically no one else wants anything to do with. “For large parts of animals to be thrown away is so wasteful,” Moore explains. To go green (and to make us turn green), Moore consumes such delicacies as cow’s feet, pig’s ear salad and lamb testicles. We don’t doubt her eco-intentions, but, as one tweep says, “There’s got to be a better way to help the environment.” [Source]
