The signature dish at the Hachikyo restaurant in Sapporo, Japan — tsukko meshi, a bowl of rice topped with salmon roe — comes with a warning that any diner who leaves so much as a single grain of rice on the plate will be forced to pay a surcharge to the fishermen who apparently risked their lives to deliver the nautical bounty.
