Winery gets feet wet with experiment to age wine under the sea

Being out to sea has never been more flavorful. California-based Mira Winery is heading to the silent world for its latest venture: submerging cases of wine in an experiment to test how the ocean affects how wine ages. The winery loaded four cases of its cabernet sauvignon into steel mesh cages, then deposited them in Charleston Harbor, S.C., where they’ll sit for three months. After that, they’ll be chemically-tested and tasted by a wine expert to see if aging under the sea is different from aging on terra firma. Winemakers have been fascinated with the particular taste of wine recovered from sunken ships, and this the ocean plays a role. [Source]
